Dairy Production

The knowhow and technology Bhutanese use for processing dairy products are quite interesting and intricate. The Bhutanese cowherders use interesting methods to stimulate cows while milking and adopt a humane process of looking after the calves or bringing them up. They have special utensils and procedures to prepare and churn the milk in order to extract butter, ways to make cheese from buttermilk, and finally ways of using wye and storing butter and cheese. Dairy production is often an intensive morning task for the cowherders taking them at least couple hours. The daily products include milk, butter, cheese of couple types, wye and cream. There are also religious rituals associated with the offering of fresh butter and cheese.
